Learn to bake with cooking demos led by Certified Master Baker Punky Egan at Lakeview Library! Punky will showcase how to make different breads and some sweet treats, as well. You'll learn about different cooking tools and techniques, as well as how to use base recipes to make a variety of products. These basic rules of baking will prep you for sweet success.

Crusts for the Perfect Fruit Pie

Even if you’ve only used purchased crust for your pies, after this class you may be tempted to try to make a dough from scratch. We’ll discuss different fats like lard, butter, and shortening, and what effect they have on the finished pie. We then have a taste comparison of doughs made with each fat and talk about an easy way to roll out the perfect crust!

Pumpkins aren’t just for jack-o-lanterns! Expand your pumpkin baking repertoire beyond pie. In this class you’ll learn about Pumpkin Spice Mousse, Pumpkin Cake with Cream Cheese Icing and Pumpkin White Chocolate Cookies. All these easy desserts can be made ahead.

A stunning bread centerpiece is just the thing for a Thanksgiving feast! We’ll discuss how to make a colorful multigrain sunburst bread. Not only is it beautiful to look at, but delicious, too!

Dress up your holiday table with a festive trio of cakes. You’ll learn to make an easy version of Black Forest Cherry Torte, Cranberry Orange Bundtlettes, and Mini Cheesecakes. Best of all, the cakes can be made ahead of time and frozen, then thawed and decorated with holiday bling!

About Punky Egan
Punky Egan earned the title of Certified Master Baker, one of less than 200 in the country, from the professional organization RBA (Retail Bakers of America). Through her 45-year professional baking career, she owned Sucré Patisserie and Dessert Lounge, was a consultant to the baking industry, and recipe developer. At Madison College, she was the director of the baking program as well as lead instructor. She co-authored 3 cookbooks, wrote baking articles for professional publications, created instructional baking videos for her baking students.
